‘Zero Food Waste’ event promotes sustainability

PHUKET: A special culinary event was staged in Phuket yesterday (Sept 27) to promote sustainable tourism by focusing on ‘zero food waste’.

The ‘Chef Table’ luxury dinner was hosted at Tin Baron restaurant in Phuket Town and saw two Michelin-starred chefs demonstrating how discarded food can be used to create delicious and appetizing dishes.

Chef Korn from Five Olives and Chef Kwang Sinpradit from Marni, who have won numerous awards in addition to their Michelin star recognition, were joined by Chef Chatchawan Varahajirakul, Chef Bank, Chef Ice, and mixologist Wyn to create an exciting food and drinks menu.

Each dish was specially created by the respective chefs with a story to accompany each one, describing how they had increased the value of discarded food to create modern, appetizing dishes.

The food used was from a range of hotels, buffet lines and supermarkets, where there is significant food wastage witnessed on a daily basis, 30% of which can easily be recycled into fresh and appetizing offerings.

Establishments supporting yesterday’s initiative included Proud Phuket Hotel at Nai Yang Beach, The Nap Hotel at Patong Beach, Peach Group Hotel at Karon Beach, Katathani Hotel at Kata Beach and The Vijit Resort Hotel, Phuket in Rawai.

The event was organised by the Sustainable Tourism Development Foundation with support by the Tourism Authority of Thailand, the Phuket Tourism Business Association, the Phuket Chamber of Commerce, the Southern Thai Hotel Association and the Phuket Hotel Association.

Phumkit Raktaengam, the chairman of the Sustainable Tourism Development Foundation, hosted the occasion and was joined by Rewat Areerob, President of the Phuket Provincial Administrative Organisation (PPAO) and a variety of selected guests.

In addition to the food and beverages on offer there were a series of decorations at the event that were also created using recycled materials that guests were permitted to take home with them as souvenirs and to further promote sustainability and the prudent use of resources.

Organisers said it was hoped the event could motivate the tourism industry in Phuket and Thailand as a whole to enhance its commitment to sustainability.

As part of the drive the 1st Andaman Sustainable Tourism Forum seminar is being held today at the Ramada Plaza by Wyndham Chao Fah Hotel in Wichit from 9am to 5pm where further best practice approaches to sustainable tourism will be discussed.
