The most prestigious recognition of them all being the one in London, where they received the highest distinction from the We’re Smart Green Guide - now officially confirmed and registered by the organisation.- A rare event, as restaurants normally take many years to achieve this - if at all - and ‘The Smokaccia Laboratory’ went straight to the maximum of 5 radishes.
In the United States, the same five-radish award is held by Eleven Madison Park and The French Laundry. In Denmark, Noma and Geranium are among the few with this recognition.
The awards are determined through anonymous inspectors globally and strict international criteria focusing on vegetable-driven cuisine and sustainability. The London ceremony marked a significant moment for the restaurant, where Chef Luca Mascolo received the official plate and SMART chef’s jacket in recognition of this achievement.
Main reasons behind that honour is Chef Luca Mascolo having curated a 9 and 18 course vegetarian and even completely vegan menu alongside his meat and fish menus. Ranking in the top 3 restaurants of most elaborate and most flavourful plant-based menus in the world and on top of that doesn’t waste any food and even uses most elements to even enhance pure flavours while accommodating almost any dietary restriction.
Brigitta Houkamp shapes the guest experience and storytelling, another strong reason alongside the beautiful flavours of the dishes why this restaurant stays in people’s memory long after the evening ends. She has crafted a space that is both sustainable and welcoming with the atmosphere of an elegant home set within an innovative culinary laboratory.
They nurture The Smokaccia Garden where they mostly grow organic herbs and fruits and look after their free-roaming chickens who’s unfertilised eggs inspire a dish that gently surprises and brings smiles to guest’s faces.
