Hilton presents the best of the best

Hilton Phuket Arcadia Resort & Spa recently presented the F&B Masters on September 17.

As part of the Hilton South East Asia & India F&B Masters 2015/2016 led by Peter Simson, General
Manager recently organised The F&B Master 2015, which was held across three disciplines: Bar, Culinary and Barista.

Three rounds of finals were staged at the hotel, country and a regional level. The Phuket News attended the fabulous event to find out more about the winning categories.

The winners of each category are as follows:

  • Khun Chalalai Saenkhan– Barista 
  • Khun Chemean Prakong– Bar 
  • Khun Kanokwan Kraithep - Pastry
  • Khun Weerawach Hattapanit - Culinary

The competition itself focused on people development and showcasing the amazing talent across each category. All 22 candidates were required to create and show live cooking, making coffee and a cocktail of their signature which should match the concept of hotel’s outlets.

The judging criteria included their skills and techniques, innovation and creativity, presentation, hygiene and safe working practices as well as time management.

A number of delicious dishes were also presented to members of the media and other guests, including caulif lower soup, Andaman king prawn curry and lime leaf; roasted lamb loin, fried black rice with egg white, buttered pumpkin and carrot, asparagus, vanilla mash and a chocolate thyme sauce; raspberry mousse, vanilla and berry sponge, lychee emulsion and strawberry sauce; and
deep-fried chocolate, lemon roll, tomato crème brulee and mango basil salsa. Each of the dishes were beautifully presented and were a fine example of the level of talent that each member
possessed.

The F&B Masters is an internal competition that discovers and celebrates the extraordinary F&B talent within Hilton Worldwide properties across AsiaPacific. It is about people development and gives team members an opportunity to develop their skills and creativity in a variety of food
and beverage disciplines that they are passionate about
