The book provides a brief history of the origins of som tum; its social influences, essential ingredients, complementary wine pairings, plus as a variety of recipes.
Som Tum presents 23 creations by chefs from the Dusit School, led by Executive Master Chef Fabrice Danniel, Cedric Maton, Pruek Sumpantaworaboot and Geraldine Mueller. It also includes two recipes from guest chefs Rapeepan Luang-aramrut and celebrity chef Phol Tantasathien.
All the dishes presented in the book, from appetisers, main course to desserts, are inspired by the famous Thai som tum dish, but with a French twist.
All proceeds from cookbook sales go directly to ‘Dusit Smiles for Operation Smiles Thailand.’
Operation Smile Thailand is a charity that provides reconstructive surgery for children born with facial deformities such as cleft lip and cleft palate.
