Aussie chef prepares to fire up Phuket BBQ

PHUKET: Angus Adams is a travelling chef from New South Wales, Australia. This Easter Sunday from 12.30pm (March 31) he will be joining Xana with Attica’s Executive Chef Mirko Cappa to prepare an Aussie barbecue with a modern twist for the launch of the beach club’s new Lazy Sundayz.

What brings you to Phuket?

To experience what Thai culture and food is about. I have always wanted to learn more about Thai cuisine.

What do you think of Thai food?

I love Thai food – the aromatic blending of fresh products result in vibrant and refreshing dishes, perfect for hot days.

What dishes are you getting excited about cooking this weekend?

I’m going to be giving some traditional dishes great modern twists.

On the seafood bar we will be serving up oyster shots with Bloody Mary. We are also preparing a great potato salad with capers, bacon and horseradish aioli and a cured salmon salad with toasted almonds and dill yoghurt.

We will have a sashimi counter and a full barbecue with loads of flavoured meat and seafood on skewers.

We are also doing some great condiments – tomato chutney, whisky barbecue sauces and onions marinated in beer. And to finish it off, some fantastic deserts as well – including smashed pavlova and trifle.

What’s next for you after Phuket?

From here I continue my journey to Europe. I’m currently working on a photo book which will detail my travels and what cuisines have been the most influential, alongside recipes I have created during my stay in each country.
